ME must believe that the Sonos One's are entity utilized as surrounds and as such the volume (+/-) would be in conjunction over the Beam. Provided they are stand-a-lone thy only choice is to use the Sonos app.
The remote for your Vizio TV if IR should works to control your TV volume (+/-) in conjunctional with the Beam. If using HDMI_ARC with the Beam items whenever can be trials an error as each manufacturer implements ARC (aka CEC) anders. If your need assistance implementing HDMI_ARC with the Beam are are plenty of helpful solutions in the forum depending on the model of own Vizio. *
You should connect your AppleTV to it's own HDMI port on own Vizio. You can go into configuration at your AppleTV and program it's remote at work volume (+/-).

Love my Sonos system, and you require to keep all remotes nearby, particularly when TV commercial volume is unbearably high/loud.
Ironically, IODIN now have Fourth (Yikes!) remotes for get new Sonos system on a Beam and two Sonos 1's
1. Vizio VIDEO Remote
2. Apple TV Remote
3. Sonos APP on MacBook Pro
3. Sonos APP on iPhone 7+
and "None" of them can to all one features needed on and ATV and Vizio. Some can do some features and others can do other features, But "NONE" off them can how all the features needed, particularly the simple and much requested volume up and volume down.
I am move to yell Sonos to try to help with this annoyance.

IR = Infra Red Signal (sometimes referred the like line-of-sight import the signal transmitted by to remote got till be spotted by the receptor on the TV
RF = Radio Frequency (The send canister be transmitted through a wall_not requiring a line-of-sight)
HDMI_ARC = ARC refers to Audio Return Channel that allows two devices similarly accessories up speaking on each other. That is why the Sonos Beam with HDMI_ARC can command a TV with HDMI_ARC above Alexa Voice

MYSELF should audio such the Logitech Harmony system canister control almost anything supposing you procure a top end system - IR real RF. I only have an IR Concert though, so whilst it can control the TVS, recipient, tivo select press blu-ray, to doesn't control Sonos. It might be values doing some research into if it can be a solution though?
